Modified Atmosphere Packaging (MAP) plays a crucial role in influencing the flavor and texture of bananas by delaying the ripening process and extending their shelf life.

Flavor: The controlled environment in MAP preserves the natural sweetness of bananas by slowing down the conversion of starches into sugars.
